"With coffee!" sez I.
My dentist is across the street, conveniently, from Nook's house. I had to walk Nook a couple of times after the dentist, and it was time for lunch, a DELIGHTFUL midday situation when it is warm and SUNNY in January.
So, speaking of comfort food.....I asked myself "do I get the usual burrito for lunch (mmm mmmmm!) or see what is going on at the food coop?". Our food coop has a great bakery and deli and coffee (delish, and 92 cents! fair trade even...). They have PLATE SIZED vegan chocolate chip cookies. Not a big plate....and, well, you know that a vegan cookie is basically a baked bowl of oatmeal, right? BUT OH WHAT A BOWL...with chocolate! So, my nice clean teeth immediately got that crapola all over them...that is why the wife was appalled...
You can see I took Nook back to Ithaca Falls. There are 150 waterfalls within ten miles of Ithaca, including several right in the MIDDLE of the city...like this one....he is standing by trees covered with ice...
You are probably wondering what in EARTH I am doing here with this tasty casserole...read on!
The wife and I were talking the other day. I had made the pot of beer chili and cornbread for the side. She remembers:
"my mom would take leftover chili the day after, top it with cornbread batter and bake it! MMMmmm" and I was like
"wait, we had something like that too!"
So I endeavored to find a recipe I liked....there were many, and I chose this one. It is a casserole and the wife teases me later "haha, you made a casserole! Like a church lady!!!".
This recipe is AWESOME. I worried that the cornbread would be mushy, that the chili would be runny all over the place. NOPE. the calculations were perfect, so that as you see it holds together just right, and scoops out of the pan neatly and the flavors !!!!! CRISP ON TOP! Recipe as I did it and link below...
Comfort food. What is your favorite comfort food? i think I live on peanut butter sandwiches firstly, and burritos secondly, maybe pasta thirdly...but this casserole was just like eating awesomeness when you were 5.... GO TO COMMENTS and give us your favorite!

Amazing Casserole! Wonder if I could get the lunch ladies at the welfare center to try this recipe. Hmmmm...
The food tastes better when it's served on/in handmade pottery dishes too!
That sounds yummy. My favorite comfort food is mac & cheese.
That casserole looks mighty tasty. Church lady...lol...they wish they were as nice and funny as you! I gotta second the mac and cheese. I'd say a big old bowl of salad, but you know I'd be lying!!
Homemade mac and cheese ALWAYS makes me feel better!
That looks great! I'll definitely try it as I know aim would love it too. I'll give a vote for Mac and cheese too although mashed potatoes are close.
Yummy! I am going to try this. You make for a great church lady! LOL.
PS...it cracks me up that you took a pic at the dentist. :)
Dear Church lady- looks great.
I dreamed of church ladies all busy in my kitchen making food by the piles.. what was that about?
Comfort food- homemade bread....
Gary= Church Lady made me laugh.
Yum.. that looks delicious! My favourite comfort food is probably anything cheesy.. if baked.
Lol! Your cat really looks like she wants part of that casserole in the picture there - mouth wide open!
Gary, you'd make an awesome church lady.
My favorite comfort food? If we're being down-home, then homemade veggie soup. If we're reaching a bit and someone else is cooking? Ham balls. They're a gross-sounding but completely awesome meatball with this amazing glaze. I'm not aware of a vegan version, but I'll keep my eyes out for you, as I'm sure you're just dying to try them.
Late to the party, as always...Comfort food? Stew and tea biscuits. I've finally got a decent stew recipe, although my tea biscuits are still a bit of a work in progress.
