My neighbors (probably yours too) have squash coming out their EARS. I have a whole file of zucchini recipes that gets dusted off every summer for frantic use (although I like zucchini anytime), but summer squash? Only 2 recipes, I like to make it into chili or lasagna, both sooooo good. Those same neighbors mentioned they made squash muffins too, a new idea to me, and I found many recipes (click here)... and a gluten-free recipe I like a lot (click here). It is not one of those rich-full-of-sugar-and-fat recipes, more of a light and fluffy muffin that turned out perfectly and makes you wonder where the squash is...I did not see any reason to NOT add blueberries and then top with cinnamon sugar because I did not have any lemon anything.....

I wish I had a neighbor that had LOTS of squash. We could use some over here. There is a guy down the road selling veggies from his truck. He has gotten a lot of our business this summer.

I have NO squash. I had to BUY zucchini at the store yesterday. This is just wrong on every level!

on the grill or in salad chilled,
in a muffin or mixed in stuffin',
in spaghetti or cut and ready.
I would eat them here or there
I would eat them anywhere.
