OK, we are out and about Saturday...and holy CATS there is my dream pair of boots at the consignment "BOUTIQUE". Engineer boots, size 9...I am a size 9. In barely used condition, just a little worn in....perfect fit, perfect match for my leather jackets and MY BADASS LIFESTYLE. I got home and threw 2 pairs of less than perfect boots into the donation pile...because PERFECT HAD ARRIVED.
It was hot. This did not stop me from trying them on, in shorts, like little kids do all summer, wearing their favorite boots and shorts.... (you know its been a hot summer when you see me wearing shorts all the time...me and my fuzzy legs are not often shorts people...)
I woke up the other day and I was like "I wanna make RICE FRITTERS!" which is a fun New Orleans dish using leftover rice. Or simply, rice you wanna turn into fritters. It is so simple and tasty and you imagine mixing in other things, for fun, like black beans or lentils and jalapenos, go NUTS! (if you mix in beans, you can pretend they are a tasty vegetarian burger)
The woman who wrote the recipe I use says something like "these go great with guacamole"...and I had an avocado waiting for a use like that. Saturday we had rice fritters with guac....and we were making corn salsa**** Sunday and decided to make the rice fritters AGAIN to go with....except we wanted to make tortillas for the first time. How come nobody told me, how EASY and TASTY making your own tortillas is? The wife made the prettiest one, and now we have the technique down. It took us exactly 11 minutes to make our first batch, keeping the finished ones hot in the oven...WOW. Then we wrapped them around rice fritters with corn salsa.... KILLER!

you can't go wrong, adding other stuff to this recipe, like black beans or more garlic or lime, GO NUTS--I have a lot of good salsa recipes, this is our favorite, esp. now that corn is fresh
Gary's corn salsa
2 ears of corn, shucked, boiled, cut off kernals with a knife into a bowl
-1 cup diced tomato
-diced large jalapeno
-1/2 purple onion
-powdered garlic, black pepper
-2 TBS red wine vinegar and lime juice
-fresh herbs like cilantro leaves or basil and oregano
stir, keep in fridge, eat!

I just bought a tortilla press and have been making my own too. There is nothing like a fresh tortilla, much better than store bought. I also did a version with gluten free flour and masa and they were just as good! Your breakfast looks delicious.
Last year I made flour tortilla's and they are VERY easy and so fresh tasting... but I will admit that I am a lazy cook and haven't made them again. Perhaps you inspire me to ditch the packaged ones, once more.

Those are some kick a$$ boots! I usually go with military issue jungle boots, but those definitely have more style.
