A couple of my pals were coming over this afternoon to goof off, play with clay, tickle my dog...so I decided to try a new cookie recipe---vegan oatmeal cookies! No dairy, no eggs, totally easy, and one of my pals is like "oatmeal is a natural anti-depressant! Makes you feel great, raises serotonin levels!" which, it turns out, is TRUE.
This recipe was HUGE winner, soft and tasty and rich. Next time I use chocolate chips rather than raisins....
vegan oatmeal cookies
preheat oven 350
-in large bowl, stir 1/3 cup soy milk and 2 tbs. ground flax seed (omega 3's!!!!)
-stir in 2/3 cup brown sugar and 1/3 cup canola oil and 1 tsp. vanilla
-mix in 3/4 cup flour, some shakes of nutmeg and cinnamon, 1/4 teas. bake soda
-fold in 1.5 cups QUICK COOKING oats and 1/2 cup raisins
-drop spoonfuls onto greased cookie sheet, tap the spoon or use a butter knife to smooth the tops a little
-bake 10-12 minutes until looking a bit golden, then remove from oven, let sit on cookie sheet to cool for a few minutes then use spatula to set them onto a wire cooling rack
Made about 15 very big cookies, soooooo good!
