time MARCHes on....



There is a birthday around here this week and the wife adores pumpkin pie......
you will recall this is my THRILLINGLY tasty pumpkin pie made with coconut milk and maple syrup with a GF rice flour crust....you also see my grubby old crock pot simmering away....talk about THRILLING! Lentil-sweet potato-curry soup, DANG!****

lentil-sweet potato curry soup for slow cooker (based on this link, click here if you don't trust me)

Turn the crock pot to high.
Toss in a little olive oil, 6 cups broth, 15-16 oz. either canned tomato or diced tomato, a diced onion, 2 cubed sweet potatoes, one cup rinsed and sorted lentils and a ton of spice like curry powder, salt, pepper, paprika, hot sauce etc.  Later add 3-4 cups fresh spinach or about a cup frozen spinach.
Run the crock pot on high until it is bubbling a lot, then low for the rest of the day, 8-10 hours.
