C is for: comedic cat.... and Cinco de Mayo!
I was MERELY going to post about our frijoles...
I was lazy. I did not soak beans overnight, just grabbed the cans and made the Goya frijoles...WITH carrot and corn and chipotle peppers!
I still simmered it all day...it is a HUGE favorite here indeed, every week! The wife wanted to make tortillas and guac but I was like "let's change it up and just put them onto corn chips and tostadas and slice avocado on top...."
... hard to believe how TASTY such simple veggie items can be.
OK, so I go to load those pics, right??? And look at the CIRCUS across the room! I snapped so many pics...the wife generally oblivious to Spike's clowning around...UNTIL...!
Spike wants some 'puter time, too. ROFL!
